Day 11. Post a recipe. Or, if you don't cook, try a new recipe and write about how it turned out.
Look at me- I followed a recipe! My Mother-In-Law will be so proud! I cook all the time and love trying new things but I am horrible at following recipes. I usually just mix a bunch of things and taste as I go. I read a blog named Gluten Hates Me and am always saying that I want to try some of the things that she makes. So I did.
Marlow is also gluten free (just in case you missed it in her blog title...) and she has been experimenting with different pizza crust ideas. I saw this one for a potato crust and thought it would be the perfect starting point.
To make the crust you'll need:
2 firmly packed cups grated raw potatoes
1/2 t salt
1 egg, beaten
1/4c grated onion
vegetable oil
Preheat the oven to 400C. Spray a 9 inch pie pan. Place raw potatoes in a colander and salt. Let sit for 10 mins, and squeeze out water. Mix potatoes, egg, and onion. Pat into pie pan, building up the sides.
Bake 30-40 mins or until golden brown. After the first 20 mins, brush with oil to crispen the crust. Remove from oven and reduce heat to 375 for the rest of the pie.
